Ultrasonic system for cutting bread, pizzas and focaccias
During the IPACK-IMA 2022 fair we presented an ultrasound application for cutting, portioning and scarifying bread, pizzas and focaccias.
Ultrasonic cutting allows for high reliability and precision, but the real strong point lies in hygiene, ease of cleaning and great flexibility. In fact, the vibrations caused by ultrasound allow you to work even in narrow and narrow spaces, reducing the size of the blades and the mechanical structure that accompanies the robot.
PROJECT NEEDS AND SPECIFICATIONS
- Create a system capable of operating in spaces where manual scarification is difficult
- Ensure high cleanliness and hygiene especially after cutting products with various condiments
- Allow greater flexibility in creating multiple different formats compared to a traditional system

GOALS ACHIEVED
- The system created has brought significant advantages in terms of productivity whilst maintaining the craftsmanship of the product
- The ultrasound system has proven to be very effective in terms of cleaning and hygiene, as we were limited to cleaning the blade only once a day before starting the normal work cycle
- The peculiarity of ultrasonic cutting lies in not having to be in perfect contact with the product to carry out correct processing; his made it possible to create many different formats with the same application
